The second recipe in our brekkie series is for a blueberry and banana breakfast smoothie. As with last week’s recipe for Bircher Muesli, this smoothie can be made the night before and only takes a couple of minutes to whizz up…quite literally. So there are definitely no excuses for skipping brekkie tomorrow…
We’ve always been a family who enjoy a smoothie in the morning, kale or otherwise, but I found that despite my good intentions, starting the day with a kale, orange, banana and almond smoothie meant I would be reaching for breakfast number 2 by 10am.
So to solve the problem, we started adding oats. Doing so the night before results in the perfect consistency though sadly the overnight stay in the fridge does rob the smoothie of its initial vibrant purple.
And it turns out that this is a massive hit with the Perky Blini. He LOVES this smoothie for brekkie, particularly when given his own plastic glass complete with straw. So if you’re struggling with breakfast options for your toddler give this a try…if you can cope with the purple mess that is!
Blueberry & Banana* Breakfast Smoothie
100g blueberries (fresh or frozen)
100g natural yoghurt
Place all ingredients in a blender (or a Nutribullet or equivalent) and blend for 30 seconds until everything is smooth. Seal and place in the fridge overnight to allow the smoothie to thicken up.
You need to make this at least 12 hours in advance but it will keep in the fridge for 2 days so double up the quantities to get organised for a few mornings on the go.
*this is also excellent with 100g raspberries and 1 cored apple in place of the banana and blueberries
